Leek in White Wine
Serves:
2 – 4
2
medium Leeks
4
tbsp olive oil
100ml
dry white wine
juice
of ½ lemon
¼
tspn ground coriander seed
|
Cut
leeks into 4cm lengths and blanch in boiling
water.
Heat
oil in pan, add leek pieces and gently stir
until coated with oil.
Add
all other ingredients, bring to boil then
cover and simmer gently for 12 minutes.
Is
best served chilled but can be served hot.
To
add colour cook with diced red capsicum.
