Leeks and Noodles

Serves: 2

 

½ tbsp olive oil

1 tbsp margarine

2 medium leeks sliced

½ tbsp soft brown sugar

150gm noodles

2 tbsp parsely chopped

1 tsp olive oil

Heat oil and margarine in saucepan, add leeks, toss well and cook on low heat for about 10 minutes.

Sprinkle sugar over the top of leeks, stir through and continue to cook for another 20 minutes.

While the leeks are cooking, cook and drain noodles.

When leeks are done, add parsley, olive oil and cooked noodles. Toss well and serve.
