Braised Leeks and Green Beans

Serves: 8

 

½ cup sherry

1 tsp olive oil

2 medium Leeks, sliced

1 cup mushrooms

2 cups green beans, 2cm lengths

1 tsp orange juice

½ tsp orange peel grated

1 tbsp cider vinegar

salt and pepper to taste

 

 

 

 

In a large fry pan, heat sherry and oil over medium heat. Add leeks and cook stirring frequently for 3 min.

Add mushrooms and beans. Saute for about 5 min. Stir in the remaining ingredients and remove from heat.

Serve warm.
