Leek and Potato Soup
Serves: 2
2 medium Leeks, diced
1 tbsp butter
2 medium Potatoes
2 cups of chicken stock
pepper

Melt
butter, add leeks and cook for 3 min.
Add
all other ingredients, bring to boil then
simmer for 15 min.
Allow
to cool, then blend in a food processor
until smooth.
Reheat
and serve.
